Poached Bosc pears in aromatic Marsala wine with spices.
Ingredients:
  • 4 bosc pears, peeled, stem still attached, 1/4-inch of bottom sliced off so pears can easily sit upright
  • 1 cup dry Marsala wine (or Madeira )
  • 1 1/2 tablespoons lemon juice
  • 1/3 cup white sugar
  • 1/2 star anise
  • 4 cloves
  • 1/2 stick cinnamon
Instructions:
  • Prepare the spiced marsala syrup by combining Marsala wine, sugar, lemon juice, star anise, cloves, and cinnamon in a saucepan. Bring to a boil.
  • Gently simmer the pears in the syrup: After the syrup starts boiling, lower the heat to medium and carefully add the pears to the pan, standing them upright. Cover and cook for 10 to 15 minutes, occasionally spooning the liquid over them. They should be tender enough to pierce easily with a fork, but firm pears may need up to 20 minutes. Once done, transfer the poached pears to a serving dish.
  • Reduce the Marsala syrup to a thick glaze: Boil the uncovered pan of syrup until thickened, adding water if it caramelizes.
  • Drizzle the syrup over the pears and present them elegantly on a platter.
