Marsala and cinnamon poached pears

Pear and mascarpone almond dessert.
Ingredients:
  • 500.00 ml marsala
  • 215.00 gm caster sugar
  • 2 cinnamon sticks
  • 1 vanilla bean, split
  • 4 packham triumph pears, peeled
  • 84.15 gm mascarpone
  • 62.50 ml flaked almonds, toasted
Instructions:
  • In a medium saucepan over medium heat, combine marsala, sugar, cinnamon, vanilla bean, and 2 cups of cold water. Stir and cook for 4 minutes until the sugar dissolves. Add the pears to the pan, cover, and increase the heat to medium-high. Bring to a boil, then reduce the heat to low and simmer for 30 minutes until the pears are just tender, turning halfway through cooking.
  • Gently move pears to a heatproof dish. Bring syrup to a boil over medium-high heat and simmer for 15 to 20 minutes until slightly thickened. Pour syrup over pears and let them sit for 30 minutes. Serve pears with syrup, mascarpone, and almonds.
