Frothy masala chai

Savor a cozy cup of traditional chai with warm spices and rich aromas.
Ingredients:
  • 10 whole black peppercorns
  • 10 whole cloves
  • 10 cardamom pods
  • 10 tsp black loose-leaf tea
  • 4.40 gm vanilla extract
  • 1 cinnamon stick
  • 1 litre milk
  • 82.50 gm raw sugar
  • Ground nutmeg, to serve
Instructions:
  • With a mortar and pestle, lightly crush peppercorns, cloves, and cardamom pods. Transfer the mixture to a saucepan along with tea, vanilla, cinnamon, and 1 cup of cold water. Bring to a boil over medium-high heat, then reduce to medium and stir in the milk.
  • Simmer until fragrant for about 3 minutes. Strain into a saucepan over gentle heat. Stir in sugar and whisk until frothy. Divide into glasses. Sprinkle with nutmeg and serve.
