Affordable homemade lunchbox delight.
Ingredients:
  • 1250.00 ml Rice Bubbles
  • 200g marshmallow
  • 100g butter, chopped
  • 50g Baking White Chocolate, melted
  • 40.00 ml rainbow choc chips (see notes)
Instructions:
  • Prepare a 16cm x 26cm slice pan by greasing it and lining it with baking paper, making sure the paper extends 2cm above the edges on all sides.
  • Combine Rice Bubbles in a large bowl. In a large microwave-safe bowl, melt marshmallows and butter on HIGH for 1 minute, stirring every 30 seconds until smooth. Pour over Rice Bubbles and mix thoroughly.
  • Evenly press mixture into pan, then drizzle with white chocolate and sprinkle with rainbow choc chips. Chill in the fridge for 2 hours until set.
  • Slice the mixture into 20 bars and individually wrap each bar in plastic wrap. Chill in the refrigerator until ready to serve.
