Marshmallow Icing

Melt marshmallows for a delicious icing that's worth the extra step.
Ingredients:
  • 0.33333334326744 cup cold water
  • 1.5 teaspoons light corn syrup
  • 1 cup miniature marshmallows
Instructions:
  • Combine egg whites, sugar, water, and syrup in the top of a double boiler. Beat until well mixed. Place over rapidly boiling water and beat constantly with an electric beater for 7 minutes or until stiff peaks form. Remove from heat.
  • Combine the marshmallows and vanilla, then vigorously beat until fully melted.
