Decadent chocolate cookies with gooey marshmallow filling, rich chocolate icing, and topped with a crunchy pecan half.
Ingredients:
  • 0.5 cup butter, softened
  • 1 cup white sugar
  • 1 egg
  • 0.25 cup milk
  • 1 teaspoon vanilla extract
  • 1.75 cups all-purpose flour
  • 0.33333334326744 cup unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 18 large marshmallows, halved
  • 0.5 cup unsweetened cocoa powder
  • 0.25 cup butter
  • 18 pecan halves
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease the cookie sheets.
  • In a large bowl, mix 1/2 cup butter and 1 cup sugar until smooth. Add the egg, then mix in 1/4 cup milk and vanilla. Combine the flour, 1/3 cup cocoa, and baking soda, then add to the mixture. Drop by heaping teaspoonfuls onto the prepared cookie sheet.
  • - Bake the cookies in the preheated oven for 8 minutes. - Take the cookie sheet out and gently press marshmallow halves cut side down into the center of each cookie. - Pop the cookies back into the oven for another 2 minutes. - Once done, lightly flatten the cookies and transfer them to wire racks to cool.
  • For the delicious icing, simply mix 1 cup sugar, 1/2 cup cocoa, 1/4 cup milk, 1 teaspoon vanilla, and 1/4 cup butter in a small saucepan over medium heat. Bring to a gentle boil, stirring occasionally, and let it bubble for 1 minute. Brush the cookies with the icing and finish each off with a pecan half before it sets.
