Chocolate surprise truffles

Spicy chocolate truffles - perfect for gifting with a hint of heat.
Ingredients:
  • 250 g good-quality dark chocolate (70% cocoa solids)
  • 125 ml double cream
  • 25 g butter
  • 1 pinch of sea salt
  • 1 large handful of hazelnuts bashed up
  • 50 g good-quality cocoa powder
  • 1 pinch of chilli powder
Instructions:
  • 1. Break the chocolate into small chunks and place in a bowl. 2. Heat the cream in a saucepan until boiling, then add the butter and remove from heat. 3. Pour the hot cream over the chocolate, allow it to sit for a few minutes to melt the chocolate. 4. Stir the mixture well and let it sit for a few more minutes. 5. Refrigerate the mixture for at least 2 hours until set. 6. Toast and finely chop hazelnuts, place in a shallow bowl. 7. Place cocoa in another bowl. 8. Use a teaspoon to scoop out small balls of the set truffle mixture, roll in your hands, then coat in cocoa or chopped hazelnuts. 9. Stir in the dried chili. 10. Finish making remaining truffles and chill in the fridge for 30 minutes before serving or gifting.
