Surprise chocolate truffle puddings

Ingredients:
  • 125g dark chocolate, chopped
  • 125g unsalted butter
  • 95g caster sugar
  • 100g plain flour
  • 4.00 gm baking powder
  • 4 large eggs
  • 6 dark chocolate balls
  • Icing sugar, to dust
  • Strawberries, to serve
Instructions:
  • Preheat the oven to 190°C. Combine chopped 125g dark chocolate, 125g unsalted butter, and 95g caster sugar in a saucepan over medium heat until melted. Stir in 100g plain flour and 1 teaspoon baking powder.
  • Add the 4 large eggs one at a time, gently incorporating each one. Grease and flour six 1/2 cup (125ml) ramekins. Fill each ramekin halfway with the batter. Drop a dark Lindt chocolate ball into the center of each ramekin. Cover with the remaining batter.
  • Bake for 12-15 minutes until golden. Unmold puddings by running a sharp knife around the edges and flip onto plates while warm. Dust with powdered sugar and enjoy with fresh sliced strawberries.
