Reindeer surprise chocolate truffles recipe

Festive chocolate truffles with a sweet surprise: Lindt Lindor Strawberries & Cream filling. Great for gifting!
Ingredients:
  • 300g dark chocolate, chopped
  • 315g packet iced chocolate madeira cake (see note)
  • 2 x 125g packets Strawberries & Cream balls, unwrapped
  • 40 mini pretzels, trimmed into antlers
  • 40 candy eyeballs (see note)
  • 20 red M&M’s
Instructions:
  • Prepare the baking tray with baking paper. Melt 50g of chocolate in a heatproof bowl placed over a bowl of simmering water, stirring constantly for about 3 minutes until smooth. Remember not to let the bowl touch the water.
  • Crumble the cake (including the icing) using your fingers until it resembles fine breadcrumbs, then mix in the melted chocolate.
  • Take 1 tablespoon of crumbled cake mix and wrap it around each Lindor ball until fully covered. Place them on the prepared tray and chill in the fridge for 30 minutes or until they are firm.
  • Melt the remaining 250g chocolate in a heatproof bowl placed over simmering water, stirring occasionally with a metal spoon until smooth, about 5 minutes.
  • Dip chocolate truffles in melted chocolate using a fork, remove excess chocolate, then place back on tray. Add pretzel antlers, candy eyes, and a red M&M nose to each truffle. Chill in fridge for 20 minutes until set.
