German Christmas marzipan potato treats, simple homemade delight for the holidays.
Ingredients:
  • 3.25 cups whole almonds
  • 4 cups confectioners' sugar
  • 3 tablespoons rose water
  • 3 drops almond extract
  • 2 tablespoons unsweetened cocoa powder
Instructions:
  • 1. Put almonds in a heat-proof bowl and pour boiling water over them. Let cool until comfortable to touch. Remove skins from almonds, keeping them in warm water. Drain almonds in a colander and pat dry with paper towels.
  • Combine almonds, confectioners' sugar, rose water, and almond extract in a food processor. Process into a smooth paste, scraping the sides for even texture. Wrap the velvety marzipan in plastic wrap and chill in a cool, dry place for 8 hours to overnight.
  • Form the marzipan into a 1/2-inch thick roll, slice into 1/2-inch pieces, and roll each piece into a ball before coating them in cocoa powder.
