Mascarpone Pasta with Chicken, Bacon and Spinach

Indulgent mascarpone sauce with chicken, bacon, and spinach tossed with bow-tie pasta.
Ingredients:
  • 6 slices bacon
  • 2 tablespoons olive oil
  • 1 cup minced onion
  • 3 pounds skinless, boneless chicken breast halves, cubed
  • 0.5 teaspoon garlic powder
  • 3 tablespoons drained and chopped sun-dried tomatoes packed in oil
  • 2 tablespoons prepared pesto sauce
  • 0.5 pound fresh spinach
  • 1 (8 ounce) container mascarpone cheese
  • 1 tablespoon Dijon mustard, or more to taste
  • 0.25 teaspoon white pepper
  • 0.5 cup grated Parmesan cheese
  • 1 (16 ounce) package farfalle (bow tie) pasta
  • 1 tablespoon grated Parmesan cheese, or to taste
Instructions:
  • In a large skillet, cook the bacon over medium-high heat, turning occasionally, until evenly browned for about 10 minutes. Drain on paper towels and crumble once cooled.
  • In a large skillet over medium heat, sauté bacon and onion in olive oil until onion is translucent, about 5 minutes. Add chicken, season with garlic powder, salt, and black pepper, and cook until chicken is cooked through and lightly browned, about 10 minutes.
  • Sauté sun-dried tomatoes and pesto in a large skillet over medium heat until pesto becomes slightly oily, around 2 minutes. Add spinach and cook until wilted, stirring constantly.
  • In a saucepan over medium heat, combine mascarpone cheese, 2 cloves of garlic, Dijon mustard, lemon juice, milk, and white pepper. Cook until creamy and bubbling, stirring continuously for about 5 minutes, then add 1/2 cup of Parmesan cheese and stir until melted, approximately 2 to 3 minutes. Pour the sauce over the chicken and bacon.
  • 1. Boil a generous amount of lightly salted water in a large pot. 2. Cook bow-tie pasta in the boiling water, stirring occasionally, until al dente, around 12 minutes; then drain. 3. Combine the pasta with the chicken mixture and place it in a serving bowl. 4. Add the spinach mixture on top and sprinkle with an extra tablespoon of Parmesan cheese, to your liking.
