Mash 'em, Smash 'em Potatoes

Delightful side dish ready in 50 minutes - delicious potato recipe.
Ingredients:
  • 6 medium potatoes (about 2 pounds total)
  • 2 1/2 cups water
  • 1/2 cup milk
  • 1/4 cup (1/2 stick) margarine or butter, soft enough to spread
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
Instructions:
  • Cleanse the potatoes thoroughly with a vegetable brush, then peel away the skins using a vegetable peeler.
  • Slice the potatoes into sizable chunks on the cutting board with a sharp knife.
  • Add the water to the saucepan and cover with a lid. Bring to a rapid boil over medium-high heat.
  • Place the potatoes in a saucepan filled with water. Bring to a boil with the lid on. Once boiling, simmer gently with the lid on for 20-25 minutes until potatoes are tender.
  • Remove saucepan from the heat. Drain potatoes in a colander over the sink. Return potatoes to the saucepan and gently shake over low heat until dry.
  • Ensure the potatoes are smooth by mashing them thoroughly with the potato masher. Gradually incorporate the milk while continuing to mash until desired consistency is reached.
  • Mix the margarine, salt, and pepper into the potatoes until fully incorporated. Mash to desired consistency.
