Elevate your French dinner with creamy mashed potato gratin made with flavorful chicken broth and crispy breadcrumbs.
Ingredients:
  • Unsalted butter for greasing casserole
  • 2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
  • 4 large russet potatoes, peeled, finely chopped (5 cups)
  • 1/4 cup unsalted butter
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste, if desired
  • 1/2 cup Progresso™ Italian style panko crispy bread crumbs
Instructions:
  • Preheat the oven to 375°F. Grease a 2-quart casserole dish with a touch of butter. In a 2-quart saucepan, bring the broth to a boil with the potatoes and 1 teaspoon of salt. Cover, lower the heat, and let simmer for around 10 minutes until the potatoes are tender. Drain the potatoes over a medium bowl using a colander, saving the broth for later use.
  • Wash and dry the saucepan. Cook 2 tablespoons of butter and garlic over low heat for 2 minutes, stirring occasionally. Add the potatoes back to the saucepan, mash them with a potato masher.
  • Combine 1 cup of reserved broth with potatoes until smooth. Mix in 2 tablespoons of butter and 1/4 cup of cheese. Season with salt and pepper to taste. Transfer potato mixture to casserole dish and sprinkle with remaining 1/4 cup cheese and breadcrumbs.
  • Bake until golden brown, for approximately 20 minutes.
