Fragrant and delicious massaman curry, perfectly effortless.
Ingredients:
  • 650g gravy beef or chuck steak, trimmed
  • 252.50 gm Coconut Cream
  • 56.00 gm massaman curry paste (see related recipe)
  • 252.50 gm coconut milk
  • 255.00 gm chicken style liquid stock
  • 125.00 ml unsalted roasted peanuts
  • 2 medium potatoes, peeled, cut into 3cm pieces
  • 1 cinnamon stick
  • 2 bay leaves
  • 5 cardamom pods, lightly crushed (see note)
  • 32.00 gm brown sugar
  • 20.00 ml tamarind concentrate (see note)
  • 24.40 gm fish sauce
  • steamed jasmine rice, to serve
Instructions:
  • 1. Heat oil in a large saucepan over medium-high heat until sizzling. Brown the beef while stirring constantly. Transfer to a plate. 2. Add 2 tablespoons of coconut cream to the pan and heat for 20 seconds. Stir in the curry paste and cook for 1 minute until fragrant.
  • Add the beef and its flavorful juices back to the pan, along with coconut milk, stock, peanuts, potatoes, cinnamon stick, bay leaves, cardamom pods, sugar, tamarind concentrate, fish sauce, and the remaining coconut cream. Mix everything together well.
  • Lower the heat and allow the mixture to simmer gently with the lid on, stirring occasionally, for 1 1/2 to 2 hours until the beef is tender. Enjoy over a bed of fluffy rice.
