Indulge in a tropical twist on classic peach pie with vibrant island flavors.
Ingredients:
  • pastry for a double-crust 9-inch pie
  • 4 cups peeled and sliced mango
  • 0.5 cup white sugar
  • 3 tablespoons cornstarch
  • 2 teaspoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter, cut into small chunks
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), then elegantly drape half of the pie pastry in a 9-inch pie pan and set it aside.
  • In a bowl, mix mango, sugar, cornstarch, lemon juice, and cinnamon until the sugar dissolves. Transfer the mixture into the pie pan. Dot with butter, cover with the top crust, seal the edges, and cut vents on top.
  • Simply bake in the oven until the crust turns a beautiful golden brown, and the juices are bubbling, for approximately 45 minutes.
