Mayonnaise cake with decadent peanut butter icing - a crowd-pleasing favorite that's irresistibly moist and light.
Ingredients:
  • 2 cups all-purpose flour
  • 0.25 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 0.5 cup evaporated milk
  • 1 tablespoon margarine
  • 0.5 cup miniature marshmallows
  • 1 cup peanut butter
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9-inch baking dish.
  • Combine flour, 1 cup sugar, mayonnaise, water, cocoa powder, and baking soda in a bowl until smooth; transfer the mixture to the prepared baking dish.
  • Bake in the preheated oven for 20-25 minutes until a toothpick inserted in the center comes out clean.
  • Combine 1 cup sugar, evaporated milk, and margarine in a saucepan, bringing to a boil and cooking for 2 minutes. Remove from heat, add marshmallows, and stir until melted. Mix in peanut butter and vanilla extract until smooth, then pour the icing over the warm cake.
