Meatball and Tortellini Soup

"Easy and comforting soup made with frozen tortellini, homemade meatballs, and fresh veggies."
Ingredients:
  • 1 pound ground beef
  • 0.5 pound ground pork
  • 0.125 cup finely chopped onion
  • 0.5 tablespoon dried parsley
  • salt and ground black pepper to taste
  • 3 quarts beef broth
  • 1 (8 ounce) can tomato sauce
  • 3 small red potatoes, or more to taste, chopped
  • 1 cup chopped onion
  • 1 cup chopped kale
  • 0.5 cup trimmed green beans
  • 0.75 cup diced carrots
  • 1 tablespoon minced fresh garlic
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon Italian seasoning
  • 1 pound frozen cheese tortellini
Instructions:
  • Combine beef, pork, onion, and parsley in a bowl. Season generously with salt and a touch of black pepper. Shape mixture into small meatballs.
  • In a large pot, bring beef broth to a boil, then stir in tomato sauce. Carefully drop in meatballs and simmer over medium heat, occasionally skimming off any oily residue for about 1 hour. Add potatoes, onion, kale, green beans, carrots, garlic, basil, and Italian seasoning. Continue simmering until vegetables are tender, for 30 minutes to 1 hour.
  • Add the frozen tortellini and cook for an additional 10 minutes until thoroughly heated.
