Meatball kebabs

Ingredients:
  • 100 g stale sliced white bread
  • 250 g pork mince
  • 2 red onions
  • 2 mixed-colour peppers
  • olive oil
  • 1 x 400g tin of green lentils
  • 100 g long grain rice
  • 200 g frozen spinach
  • 1 heaped teaspoon smoked paprika plus extra to serve
  • 4 tablespoons natural yoghurt
Instructions:
  • Soak 4 wooden skewers in cold water. In a shallow bowl, sprinkle 2 tablespoons of water over the bread. Let it soak briefly, then squeeze out excess water. Mix the minced pork with the bread, sea salt, and black pepper. Shape into 16 balls. Cut onions into quarters and separate into petals. Deseed the peppers and chop into chunks. Trim skewers to fit snugly in a pan. Thread onion, pepper, and meatballs onto skewers, then rub with 1 teaspoon of olive oil. Cook veggie trimmings in a pan with lentils, water, and rice (100g), covered, for 8 minutes. Add spinach, cover, and cook for 5 more minutes. Cook kebabs in a separate pan for 12 minutes until golden, sprinkling with most of the smoked paprika in the last 2 minutes. Serve kebabs over lentils and rice. Top with yogurt, a pinch of smoked paprika, and a drizzle of paprika oil.
