Try a quick and comforting weeknight meal: meatball mac and cheese - ready in just 25 minutes!
Ingredients:
  • 375g macaroni
  • 60g butter
  • 50g plain flour
  • 11.80 gm Dijon mustard
  • 625g milk
  • 120g cheddar cheese
  • 560g pkt Beef & Pork Meatballs
  • 400g jar tomato pasta sauce with basil
  • 35g breadcrumbs
  • 40g parmesan
  • Basil leaves, to serve
Instructions:
  • Preheat your oven to 180°C. Boil macaroni in a large saucepan as directed on the packet until al dente. Drain thoroughly.
  • In a large saucepan over medium heat, melt butter. Stir in flour and mustard, cooking for 2 minutes until the mixture bubbles and becomes grainy. Reduce heat to low. Slowly pour in milk while stirring constantly. Continue to cook for 5 minutes until the sauce boils and thickens. Take off heat and mix in cheddar until combined. Season to taste.
  • While the macaroni is cooking, brown the meatballs in a large frying pan according to packet instructions. Stir in the pasta sauce and simmer for 5 minutes until it thickens.
  • Mix the macaroni with the sauce, then alternate layers of meatball mixture and macaroni mixture in a 12-cup (3L) ovenproof dish. Combine breadcrumbs and Parmesan in a small bowl, then sprinkle over the macaroni mixture. Spray with olive oil and bake for 15 minutes until golden. Serve topped with fresh basil leaves.
