Quick and easy family dinner in one skillet with just 5 ingredients in 30 minutes.
Ingredients:
  • 3/4 cup uncooked regular long-grain white rice
  • 1 can (10 3/4 oz) condensed cream of celery soup
  • 2 cups water
  • 1 1/2 cups ready-to-eat baby-cut carrots, cut in half lengthwise
  • 1 box (12 oz) frozen cooked Italian-style meatballs, thawed
  • Chopped fresh parsley, if desired
Instructions:
  • Combine rice, soup, and water in a large nonstick skillet. Bring to a boil, then simmer over medium-low heat. Cover and cook for 5 minutes.
  • Combine the carrots and meatballs with the rice mixture, cover, and simmer for 10 to 15 minutes. Stir occasionally to prevent sticking until the rice and carrots are tender, and the meatballs are heated through. Finish by sprinkling with fresh parsley.
