Create savory meatball dish with rich gravy and creamy mashed potatoes using only six ingredients for a flavorful meal in minutes!
Ingredients:
  • 750g golden delight potatoes, peeled, chopped
  • 2 x 500g packets Italian style meatballs
  • 1 large brown onion, halved, thinly sliced
  • 20.00 ml balsamic vinegar
  • 29g packet brown onion gravy
  • 20.00 ml chopped fresh rosemary leaves
Instructions:
  • Boil potatoes in salted water until tender, about 15 minutes. Drain and mash until smooth in the same pan over low heat. Season with salt and pepper, then cover to keep warm.
  • Heat oil in a large frying pan until shimmering over medium-high heat. Brown meatballs by turning them for 2 to 3 minutes. Lower heat to medium-low and continue cooking, turning occasionally, for 8 to 9 minutes until fully cooked. Transfer to a plate.
  • Turn up the heat to medium and cook onion, stirring occasionally, for 5 to 6 minutes until softened. Stir in vinegar for 1 minute. Sprinkle in gravy powder, pour in 1 cup boiling water, and bring to a boil. Lower the heat to simmer for 1 minute. Put the meatballs back in the pan, add rosemary, and let them cook for 2 to 3 minutes until heated through. Serve with mashed potatoes.
