Mediterranean chicken salad with bell peppers, Greek olives, red onions, and capers - a vibrant addition to any summer gathering.
Ingredients:
  • Mixed salad greens, if desired
  • 1/2 cup mayonnaise
  • 1 1/2 cups plain yogurt
  • 1/2 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 2 cups cubed deli rotisserie chicken (from 2- to 3-lb chicken)
  • 1 cup cubed cooked peeled potatoes
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 cup Greek olives, pitted
  • 1/4 cup capers, rinsed
  • 1/4 cup chopped red onion
  • Salt and pepper to taste
Instructions:
  • Combine mayonnaise, 1/2 cup of yogurt, and basil in a food processor. Process until smooth. Add lemon juice and blend. Transfer the mixture to a large bowl.
  • Stir in the remaining 1 cup of yogurt until well combined. Gently mix in the chicken, potatoes, bell peppers, olives, capers, and onion. Season generously with salt and pepper.
  • Chill for 3 hours, then present the salad on a bed of mixed greens.
