Succulent chicken dish with fresh basil, best served with sauteed veggies and French bread.
Ingredients:
  • 1 egg
  • 0.5 cup heavy whipping cream
  • 1 cup crushed saltine crackers
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon garlic powder
  • salt and pepper to taste
  • 2 pounds skinless chicken thighs
  • 0.25 cup olive oil
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Mix the egg and heavy cream in a bowl until well combined. In another bowl, blend cracker crumbs, cheese, basil, garlic powder, and season with salt and pepper.
  • Wash and dry chicken. Coat each piece in egg wash, then generously cover in cracker crumbs. Heat olive oil in a skillet. Cook chicken for 5 minutes on each side until crispy and golden brown. Transfer chicken to a 9x13 baking dish and cover with foil.
  • Preheat oven to 400°F (200°C). Bake chicken covered for 15 minutes, then uncover and continue baking for 15-20 minutes until juices run clear.
