Mediterranean deli plate

Ingredients:
  • 2 red capsicum
  • 200g mixed salad leaves, washed, dried
  • 8 slices hot Spanish salami
  • 8 slices coppa or pancetta
  • 4 slices mortadella
  • 4 thin slices prosciutto
  • 2 ripe tomatoes, cut into wedges
  • 200g mixed marinated olives (about 32)
  • 2 marinated artichoke hearts, (herb and garlic) halved
  • 1 lemon, cut into wedges
  • Ciabatta bread loaf, sliced, toasted if desired, to serve
Instructions:
  • Preheat the grill to high. Quarter the capsicum lengthways and remove the seeds. Grill the capsicum, skin side up, until charred and blistered, for about 8-10 minutes.
  • Place the capsicum in a sealed plastic bag and let it rest for 5 minutes.
  • Assemble salad leaves, sliced meats, tomatoes, olives, artichokes, and lemon attractively on a large platter or individual plates.
  • Peel the capsicum and cut each piece in half before arranging on a platter or plates. Serve alongside the ciabatta bread.
