Mediterranean-inspired baked chicken seasoned with lemon, garlic, and oregano basting sauce.
Ingredients:
  • 1 lemon
  • 2 teaspoons dried oregano
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 6 chicken legs
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Grate the zest of half a lemon into a 9x13 inch baking dish, then squeeze in about 1/4 cup of juice. Add oregano, garlic, oil, salt, and pepper. Mix well.
  • Peel off and discard chicken skin. Coat chicken with zesty lemon mixture, placing bone-side up in baking dish. Bake covered for 20 minutes. Flip chicken over and baste.
  • Lower the oven temperature to 400 degrees F (205 degrees C and continue baking the dish uncovered, while basting every 10 minutes, for an additional 30 minutes. Serve the chicken with the flavorful pan juices.
