Greek Orzo Salad: Orzo with Tomatoes, Cucumber, Olives, and Lemon Vinaigrette - Bursting with Mediterranean Flavors.
Ingredients:
  • 0.5 (16 ounce) package uncooked orzo pasta
  • 0.5 pint cherry tomatoes, halved
  • 0.5 cup diced red onion
  • 1 cup diced cucumber
  • 1 cup pitted Mediterranean olives, cut in half
  • 1 cup finely diced Asiago cheese
  • 1.5 teaspoons minced fresh garlic
  • 0.5 cup extra-virgin olive oil
  • 0.5 cup red wine vinegar
  • 0.5 lemon, juiced
  • 0.5 teaspoon ground black pepper
  • 0.25 cup chopped fresh basil
  • 2 tablespoons chopped fresh parsley
Instructions:
  • 1. Boil a large pot of lightly salted water. Add orzo and cook until al dente, about 9 minutes. Drain and rinse well with cold water.
  • In a large bowl, toss together orzo, cherry tomatoes, red onion, cucumber, olives, and Asiago cheese.
  • Prepare the vinaigrette by combining minced garlic, olive oil, red wine vinegar, lemon juice, salt, and pepper in a small bowl. Drizzle the mixture over the orzo salad and gently toss to coat. Mix in fresh basil and parsley, ensuring everything is well combined. Allow the flavors to meld for 20 minutes, stirring occasionally.
