Mediterranean pasta salad with lentils, feta, olives, red onion, and herbs.
Ingredients:
  • 1.25 cups orzo pasta
  • 6 tablespoons olive oil, divided
  • 0.75 cup dried brown lentils, rinsed and drained
  • 0.33333334326744 cup red wine vinegar
  • 3 cloves garlic, minced
  • 0.5 cup kalamata olives, pitted and chopped
  • 1.5 cups crumbled feta cheese
  • 1 small red onion, diced
  • 0.5 cup finely chopped fresh mint leaves
  • 0.5 cup chopped fresh dill
  • salt and pepper to taste
Instructions:
  • Boil a large pot of lightly salted water. Cook pasta until al dente, around 8 to 10 minutes. Drain and transfer to a large bowl. Mix in 1 tablespoon of olive oil, cover, and chill in the fridge until cool.
  • In a saucepan, simmer lentils in water until tender, about 15 to 20 minutes. Drain and let cool.
  • In a small bowl, mix together the remaining olive oil, vinegar, and garlic.
  • Take the pasta out of the refrigerator and combine it with lentils, oil mixture, olives, feta cheese, red onion, mint, and dill. Mix everything together well. Season with salt and pepper according to your taste. Cover and refrigerate for at least 2 hours before serving.
