Minty cheesecake bars with a touch of whimsy and vibrant color.
Ingredients:
  • 0.75 cup all-purpose flour
  • 0.33333334326744 cup white sugar
  • 0.33333334326744 cup unsweetened cocoa powder
  • 6 tablespoons cold butter
  • 1 (8 ounce) package cream cheese, at room temperature
  • 1 teaspoon peppermint extract
  • 5 drops green food coloring
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine flour, sugar, and cocoa powder in a large bowl, then blend in butter until the mixture is crumbly. Reserve 1 cup of the crumbs for the topping. Press the rest of the crumb mixture firmly into an ungreased 8x8-inch baking pan.
  • Place the crust in the preheated oven and bake until fully set, approximately 15 minutes. Remove from the oven and allow it to cool at room temperature while keeping the oven on.
  • While the crust rests, use an electric mixer to beat cream cheese and sugar until fluffy. Mix in egg, peppermint extract, and green food coloring thoroughly. Stir in milk until batter is smooth. Pour the batter over the cooled crust and sprinkle the reserved crumb mixture on top.
  • Bake for 20-25 minutes until the filling is firm, then allow to cool before slicing into 25 bars.
