Impossibly Easy Grasshopper Cheesecake

Prepare in advance: Minty cheesecake dessert, chilled and ready to impress.
Ingredients:
  • 3/4 cup Original Bisquick™ mix
  • 3/4 cup sugar
  • 1/4 cup green crème de menthe
  • 3 eggs
  • 2 packages (8 oz each) cream cheese, softened
  • 1/4 cup miniature semisweet chocolate chips
  • 1/2 cup whipping cream
  • 1 cup miniature semisweet chocolate chips
Instructions:
  • Preheat oven to 350°F and generously coat a 9-inch glass pie plate with cooking spray.
  • Combine all cheesecake ingredients, except chocolate chips, in a large bowl. Use an electric mixer on high speed for 2 minutes, making sure to scrape the bowl frequently. Gently fold in the chocolate chips, then transfer the mixture into a pie plate.
  • Bake for approximately 35 minutes until the center is firm and puffed. Allow to cool for 45 minutes until the cheesecake top is cracked.
  • Heat the ganache ingredients in a 1-quart saucepan over medium heat, stirring constantly until smooth. Remove from heat and spread carefully over the cheesecake. Chill in the refrigerator for at least 3 hours. Keep covered in the refrigerator.
