Tropical mango mojito with coconut rum and minty syrup - a refreshing poolside cocktail.
Ingredients:
  • 1 cup water
  • 12 fresh mint leaves, or more to taste
  • 0.125 lime
  • 0.125 fresh mango, peeled and cubed, or more to taste
  • 1.5 fluid ounces coconut-flavored rum, or more to taste
  • ice
  • club soda, or as needed
Instructions:
  • In a small pot over medium heat, mix water and sugar until sugar completely dissolves. Stir in 12 fresh mint leaves. Bring to a boil, whisking for 1 minute. Remove from heat and allow to cool for about 30 minutes.
  • In a glass, muddle lime and 12 mint leaves together to extract flavors. Add fresh mango and muddle until combined. Mix in 2 tablespoons of mint simple syrup and coconut rum. Fill glass with ice and top off with club soda. Stir once more to distribute flavors evenly.
