Brown sugar meringues with mango and mint

Caramelized brown sugar enhances these divine meringues.
Ingredients:
  • 2 egg whites
  • 55g caster sugar
  • 55g brown sugar
  • 300ml thickened cream
  • 12.00 gm icing sugar
  • 1.25 gm Brand ground ginger
  • 1 ripe Kensington Pride mango, peeled, thinly sliced
  • 40.00 ml baby mint leaves
Instructions:
  • Preheat your oven to 120C. Draw four 10cm discs on baking paper, then flip the paper over to line your baking tray.
  • Whip the egg whites in a clean, dry bowl using an electric mixer until soft peaks form. Gradually add the combined caster sugar and brown sugar, 1 tablespoon at a time, beating well after each addition until the sugar completely dissolves.
  • Scoop the mixture onto the prepared tray, then use a round-bladed knife to evenly spread it to the edges. Bake for 1 hour or until the meringues are dry to the touch. Turn off the oven and let the meringues cool completely inside with the door slightly open.
  • Whip the cream, icing sugar, and ginger with an electric mixer until soft peaks form.
  • Top the airy meringues with luscious cream and ripe mango. Finish with a refreshing sprinkle of fresh mint before serving.
