Mango daiquiri with mint & lime sugar

Ingredients:
  • 1 mango, cheeks removed, peeled
  • 100ml Malibu
  • 42.00 gm fresh lime juice
  • 250.00 ml crushed ice
  • Fresh mint, to serve
  • 110g white sugar
  • 40.00 ml chopped fresh mint
  • 1 tsp finely grated lime rind
Instructions:
  • For the mint sugar, combine sugar, mint, and lime rind in a food processor. Pulse until blended. Transfer to a small bowl and set aside for serving.
  • Spread the mint sugar on a plate. Moisten the rim of two martini glasses, then dip and twist each rim in the sugar to coat evenly.
  • Dice the mango cheeks. Blend mango, Malibu, lime juice, and crushed ice until smooth. Immediately pour into glasses and serve.
