Mediterranean-inspired red snapper with parsley, oregano, garlic, and lemon, cooked effortlessly in a Panasonic CIO.
Ingredients:
  • 0.25 cup chopped fresh parsley
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped fresh oregano
  • 1 lemon, zested and sliced
  • 3 cloves garlic, minced
  • 2 (1 pound) whole red snappers, cleaned and scaled
  • salt and ground black pepper to taste
Instructions:
  • Combine the parsley, olive oil, oregano, lemon zest, and garlic in a small bowl.
  • Begin by gently washing the red snappers and then drying them with paper towels. Next, make 3 diagonal cuts across the top of each fish, being careful not to cut all the way through the bone. Finally, generously season the inside of the fish with salt and pepper.
  • Coat the fish inside and out with the parsley mixture, ensuring it gets into the slits. Position the fish in the middle of the grill pan and add salt and pepper to taste.
  • Preheat the grill pan in the Panasonic Countertop Induction Oven on the Fish setting for a 1-pound serving. Cook until the internal temperature reaches at least 130 degrees F (54 degrees C) using an instant-read thermometer, around 20 minutes. Adjust cooking time if necessary. Serve with lemon slices.
