Whip up a creamy Roasted Red Pepper Hummus using a food processor. Perfect for dipping veggies, pita, or spreading on sandwiches. Quick and delicious!
Ingredients:
  • 1 (14 oz) can chickpeas, drained
  • 1 large garlic clove, peeled
  • 1 lemon, zested and juiced
  • 1/2 teaspoon cumin
  • 3/4 teaspoon kosher salt
  • 2 tablespoons olive oil, plus more for garnish.
  • 1/2 cup roasted red peppers, divided and drained
Instructions:
  • In a food processor, blend chickpeas and garlic. After a minute, add lemon zest and 1 tablespoon lemon juice. Blend well, scraping the sides as needed. Incorporate cumin, salt, and 2 tablespoons olive oil until creamy. Include roasted red peppers and blend for about a minute. Taste and adjust seasonings as desired.
  • Serve elegantly: Spoon the hummus into a bowl, creating decorative swirls with the back of a spoon. Sprinkle the chopped remaining 1/4 cup of roasted red pepper on top, followed by a drizzle of olive oil and a touch of lemon juice.
  • Presentation: Enjoy the hummus alongside warm pita bread, pita chips, crackers, or fresh sliced vegetables, or spread it on your favorite sandwiches.
