Mediterranean-inspired stew with navy beans, tomatoes, red bell pepper, and fresh sage and rosemary for bold flavor.
Ingredients:
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 large tomato, chopped
  • 1 medium red bell pepper, chopped
  • 3 cloves garlic, coarsely chopped
  • 4 leaves fresh sage
  • 1 sprig fresh rosemary
  • 0.25 teaspoon red pepper flakes, or more to taste
  • salt and freshly ground black pepper to taste
  • 3 (16 ounce) cans navy beans, rinsed and drained
  • 1 bay leaf
  • 3 cups water, or as needed to cover
  • 2 tablespoons finely chopped fresh chives, or to taste
Instructions:
  • In a skillet over medium heat, heat oil and sauté onion until soft and translucent, about 5 minutes. Add tomato and bell pepper, sauté until pepper is tender, about 3 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add sage, rosemary, pepper flakes, salt, and pepper. Lower heat to low and simmer for 5 minutes.
  • Combine the vegetable mixture with beans and bay leaf in a large pot over medium heat. Ensure the mixture is covered with water. Cook for approximately 30 minutes, stirring occasionally and adding water gradually if needed to prevent the beans from drying out.
  • Garnish with fresh chives before serving.
