Quick Mediterranean tuna capellini ready in 15 minutes for a weekday delight.
Ingredients:
  • 1 pound capellini pasta
  • 3 lemons, zested and juiced
  • 0.25 cup extra-virgin olive oil
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons minced fresh parsley
  • 2 cloves garlic, minced
  • 1 pinch crushed red pepper flakes, or to taste
  • 1 (5 ounce) can tuna packed in oil
  • 0.5 (15.5 ounce) can cannellini beans, drained and rinsed
Instructions:
  • Fill a large pot with salted water and bring it to a rolling boil. Add capellini, cook over medium heat until al dente, 4 to 5 minutes.
  • In a large bowl, freshly squeeze the juice of a lemon, ensuring no seeds get mixed in. Drizzle in olive oil and stir well. Add Parmesan cheese, parsley, lemon zest, garlic, salt, and crushed red pepper, stirring until fully incorporated. Gently incorporate the tuna, breaking apart any larger chunks. Finally, delicately fold in the cannellini beans.
  • After draining the capellini pasta, mix it with the tuna mixture. Toss well to combine and serve right away.
