Mouthwatering Mediterranean salad with chickpeas, oregano, Kalamata olives, tomatoes, and feta cheese for a satisfying and flavorful side.
Ingredients:
  • 2 cups diced zucchini
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 cup halved grape tomatoes
  • 0.75 cup chopped red bell pepper
  • 0.5 cup chopped sweet onion (such as Vidalia®)
  • 0.5 cup crumbled feta cheese
  • 0.5 cup chopped Kalamata olives
  • 0.33333334326744 cup olive oil
  • 0.33333334326744 cup packed fresh basil leaves, roughly chopped
  • 0.25 cup white balsamic vinegar
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon capers, drained and chopped
  • 0.5 teaspoon dried Greek oregano
  • 1 pinch crushed red pepper flakes
Instructions:
  • Combine zucchini, chickpeas, tomatoes, red bell pepper, onion, feta cheese, Kalamata olives, olive oil, fresh basil, vinegar, rosemary, capers, garlic, oregano, red pepper flakes, salt, and black pepper in a large bowl and mix until well combined.
