Mediterranean-style dab

Tender and sweet dab fish, similar to lemon sole, is delicious when cooked on the bone.
Ingredients:
  • 2 whole dab from sustainable sources, ask your fishmonger, skin on and gutted
  • 4 rashers higher-welfare smoked streaky bacon
  • 1 tablespoon pine nuts
  • 1 small bunch fresh flat-leaf parsley roughly chopped
  • 1 lemon
  • 8 cherry tomatoes, on the vine halved or quartered
  • 1 small handful black olives stone in
  • 2 large handfuls salad leaves, such as rocket radicchio and chicory washed and spun dry
  • balsamic vinegar
  • extra virgin olive oil
Instructions:
  • Score dab at 2cm intervals on both sides using a small sharp knife. Heat olive oil in a large pan over high heat. Cook bacon and pine nuts until lightly golden, then set aside. Season fish with salt, pepper, parsley, and lemon zest, ensuring the flavors penetrate the cuts. Cook fish skin-side down in the pan for a couple of minutes until golden, then flip. Add tomatoes, olives, and remaining parsley to the pan. Dress salad leaves with balsamic, lemon juice, salt, pepper, and olive oil. Cook fish for 6-7 minutes, checking for doneness by testing the flesh. Squeeze lemon juice over the fish, shake the pan, then remove from heat. Serve with salad and optionally, new potatoes.
