"Simple and satisfying seafood soup, a cozy winter treat."
Ingredients:
  • 1 large brown onion, halved, finely chopped
  • 1 red capsicum, halved, deseeded, finely chopped
  • 1 x 400g can diced Italian tomatoes
  • 375ml (1 1/2 cups) fish stock
  • Pinch of saffron threads
  • 1 dried bay leaf
  • 2 x 5cm strips lemon rind
  • 1kg skinless fish fillets, cut into 3cm pieces
  • 125.00 ml finely shredded fresh basil
  • Freshly ground black pepper
Instructions:
  • In a large saucepan over medium heat, heat the oil until shimmering. Add the onion and capsicum, cooking and stirring for about 10 minutes until the onion softens slightly. Stir in the garlic and cook for another minute until fragrant.
  • Combine the tomato, fish stock, saffron, bay leaf, and lemon rind in a pot. Bring it to a boil, then lower the heat and simmer covered for 15 minutes until the soup slightly thickens.
  • Place the fish in the pan and cook it uncovered for 5 minutes, or until the fish is perfectly cooked.
  • Pour the soup into individual bowls. Top with fresh basil and a sprinkle of black pepper before serving right away.
