Mediterranean-style herring linguine

Budget-friendly herring pasta: affordable, delicious, and healthy!
Ingredients:
  • 500 g dried linguine
  • 2 cloves of garlic
  • 1 fresh red chilli
  • ½ a bunch fresh flat-leaf parsley (15g)
  • olive oil
  • 1 tablespoon baby capers
  • 4 x 40 g herring fillets skin on, scaled, pin-boned, from sustainable sources
  • 1 handful of ripe cherry tomatoes on the vine
  • 1 lemon
  • 1 knob unsalted butter optional
  • extra virgin olive oil
Instructions:
  • Cook the linguine in a pot of boiling salted water following the package instructions. Peel and finely slice the garlic, then do the same with the chili. Finely chop the parsley leaves and slice the stalks. Heat olive oil in a large frying pan over high heat. Add the garlic, chili, capers, and parsley stalks, cooking until they start to color, about 2 minutes. Cut the herring into 2cm strips and add to the pan, cooking for 2 minutes until they start to break up. Quarter the tomatoes, squeeze lemon juice over them, then add to the pan. Transfer the cooked linguine directly into the frying pan using tongs, adding some cooking water. Add butter if desired, then toss everything together. Season with salt and pepper, add most of the parsley leaves, a drizzle of extra virgin olive oil, mix well, and transfer to a platter. Sprinkle remaining parsley leaves on top and serve at the table for everyone to enjoy.
