elegant fruit salad with zesty pickled onions and smooth avocado in a martini glass.
Ingredients:
  • 1 small red onion, very thinly sliced
  • 2 tablespoons red wine vinegar
  • 0.5 cup freshly squeezed orange juice
  • 2 teaspoons extra-virgin olive oil
  • 1 tablespoon grated orange zest
  • 0.25 teaspoon kosher salt
  • freshly ground black pepper
  • 2 cups small cantaloupe balls
  • 2 cups 1/2-inch diced seedless watermelon
  • 1 ripe mango, cut into 1/4-inch dice
  • 1 cup loosely packed cilantro leaves
  • 2 ripe Hass avocados
  • 1 tablespoon fresh lime juice
  • 6 thin lime slices
Instructions:
  • In a small bowl, mix thinly sliced red onion with red wine vinegar. Cover and refrigerate for at least one hour.
  • Combine fresh and tangy orange juice with aromatic olive oil and citrusy zest in a spacious salad bowl. Season the mixture with a sprinkle of salt and a dash of black pepper. Add the refreshing cantaloupe, juicy watermelon, and sweet mango to the dressing. Right before serving, gently fold in the tangy pickled onions and fragrant cilantro leaves.
  • Dice the avocados into 1/2-inch pieces and place them in a small bowl. Drizzle lime juice over them and sprinkle with the remaining 1/4 teaspoon of salt. Gently stir to combine. Divide the avocado evenly among 6 large martini or wine glasses. Top with the melon salad and garnish each with a lime slice.
