Summer dessert featuring sweet melons.
Ingredients:
  • 100g caster sugar
  • 125ml water
  • 2 green tea bags
  • 5cm piece fresh ginger, peeled, thinly sliced
  • 2 sprigs fresh mint
  • 1/2 small watermelon, peeled, thinly sliced
  • 1/2 rockmelon, seeded, peeled, thinly sliced
  • 1/2 honeydew melon, seeded, peeled, thinly sliced
Instructions:
  • In a saucepan, gently simmer sugar, water, tea bags, ginger, and mint. Stir occasionally for 5 minutes until sugar dissolves. Increase heat to medium-high, boil for 2 minutes until slightly thickened. Cool the syrup once removed from heat.
  • Combine the watermelon, rockmelon, and honeydew melon in a large bowl. Drizzle the strained syrup over the melon mixture. Chill in the fridge for 1 hour.
  • Serve the melon in serving bowls or clear tumblers and drizzle with ginger tea syrup.
