Mint enhances the refreshing melon in this summery dessert.
Ingredients:
  • 125ml (1/2 cup) water
  • 2 large fresh mint sprigs
  • 5cm-piece fresh ginger, peeled, thinly sliced
  • 42.00 gm fresh lime juice
  • 40.00 ml finely shredded fresh mint, extra
  • 500g (about 1/4) honeydew melon, deseeded, peeled, thinly sliced
  • Thick natural yoghurt, to serve
Instructions:
  • In a medium saucepan, blend together water, sugar, mint sprigs, and ginger over low heat until sugar dissolves. Increase heat to high and boil for 5 minutes until syrup thickens slightly without stirring. Take off the heat and discard the ginger and mint sprigs.
  • Combine lime juice and extra mint in the syrup, stir well. Serve melon in serving bowls, drizzle with the syrup, and optionally serve with yogurt.
