Ingredients:
  • 400g Dutch spiced biscuits
  • 250.00 ml roasted hazelnuts, chopped
  • 375.00 ml mini marshmallows
  • 400g Dark Cooking Chocolate, chopped
  • 12.00 gm icing sugar
  • 10.00 gm cocoa powder
Instructions:
  • Prepare a 3cm deep, 20cm x 30cm (base) lamington pan by greasing and lining it.
  • Crush biscuits in a food processor until finely chopped, leaving some texture. Transfer to a bowl and mix in hazelnuts and marshmallows until well combined.
  • Melt chocolate in a heatproof bowl over simmering water, stirring until smooth. Mix into biscuit mixture until well combined. Transfer to prepared pan, cover, and refrigerate for 2 hours until set.
  • Cut the dessert into elegant squares, then chill in the refrigerator for an additional hour until it's deliciously firm. Just before serving, sprinkle the squares with a delightful mix of icing sugar and cocoa for a perfect finishing touch.
