Memphis-Style Pork Ribs

Slow cook Memphis-style dry rubbed pork ribs for 5 hours until perfectly BBQed - juicy, tender, and bursting with flavor, requiring minimal effort.
Ingredients:
  • 1/4 cup sweet paprika
  • 1/2 cup brown sugar
  • 1 Tbsp black pepper
  • 1 Tbsp garlic powder
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • 2 teaspoons cayenne
  • 1 teaspoon dry mustard
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon dried oregano
  • 2 St. Louis-cut or spare rib racks
Instructions:
  • Prepare the ribs: To ensure your pork ribs are extra tender and soak up all the delicious flavors of the rub, remove the thin, whitish membrane from the underside of each rack. Place the rack curved side up on your work surface. Start peeling off the membrane from one corner and gently tug it off in one smooth motion. Use a paper towel for a better grip if needed. Repeat for the other rack.
  • Prepare the dry rub by combining all the dry ingredients. Massage the flavorful blend onto the ribs, then refrigerate overnight if possible.
  • Prepare the grill or smoker with low, indirect heat at 200-220°F. Place the ribs on the grill away from the heat source to prevent sizzling. Cover and cook for 1 hour without disturbing.
  • Grill for 4 hours, turning and rotating the ribs every hour for even cooking. No need to baste as the fat in the ribs will do the job. Monitor grill temperature between 200-220°F while rotating.
  • To check for doneness, after 4 to 8 hours on the grill, lift a rack with tongs and when the crust cracks to reveal rosy pink meat underneath, the ribs are ready. Don't forget to rate this recipe below! Enjoy!
