Southern BBQ Pork Totchos: Tater Tots® smothered in cheese, tangy BBQ sauce, and refreshing coleslaw, a delicious twist on classic bar food.
Ingredients:
  • 1 (28 ounce) package frozen bite-size potato nuggets (such as Extra Crispy Tater Tots®)
  • 2 cups shredded pepperjack cheese
  • 2 cups cooked pulled pork
  • 0.5 cup chopped white onion
  • 0.25 cup chopped pickled jalapeno peppers
  • 0.5 cup barbeque sauce (such as Cattlemen's®)
  • 1 cup prepared coleslaw
  • 1 bunch green onions, sliced
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and lay out the potato nuggets in a neat single layer on a baking sheet.
  • Place in the preheated oven and bake for 20 minutes until the potato nuggets are crispy. Shake the baking sheet and bake for an additional 20-24 minutes until extra crispy. Remove from the oven and switch on the broiler.
  • Sprinkle pepperjack cheese, pulled pork, onion, and jalapeno peppers over potato nuggets. Finish with a generous drizzle of barbeque sauce to create "totchos".
  • Place in the preheated oven and broil until the cheese is bubbly, approximately 5 to 7 minutes. Garnish the "totchos" with coleslaw and green onions.
