Mermaid and shark jelly cups

Make fun ocean-themed jelly cups for kids' parties.
Ingredients:
  • 160g white chocolate melts, melted
  • 250g plain sweet biscuits
  • 100g butter, melted
  • 20.00 ml blue sprinkles
  • 20.00 ml green sprinkles
  • 3 packets 85g Berry Blue Flavoured Jelly
  • 3 packets 85g Lime Flavoured Jelly
  • 800ml thickened cream
  • 75.00 gm icing sugar
  • 6.60 gm vanilla extract
  • Blue and green food colouring
  • Bought mini meringues, to decorate
  • Assorted blue, silver and green cachous, to decorate
  • Sprinkles, to decorate
Instructions:
  • On non-stick baking paper, trace the shapes of mermaid tails and shark fins. Fill a piping bag with melted white chocolate using a fine nozzle. Pipe the outlines of the tails and fins with the white chocolate, then fill them in. Let them set.
  • In a food processor, finely crush the biscuits. Blend in the butter until combined. Add sprinkles and pulse to mix. Press 1/3 cup of the mixture firmly into each of 8 glasses. Chill in the fridge while making the jelly.
  • Follow the instructions on the jelly packet to prepare it. Let it cool to room temperature. Pour the jelly into 8 prepared glasses (4 with blue jelly and 4 with green jelly). Chill in the refrigerator until fully set.
  • With an electric mixer, whip cream, sugar, and vanilla until stiff peaks form. Separate into bowls and color one with blue and the other with green food coloring. Swirl the colors together for a marbled look. Transfer to a piping bag with a large star tip.
  • Drizzle marbled cream over the jelly, delicately arrange the tails and fins, sprinkle mini meringues, and adorn with cachous and sprinkles.
