Mexican baked eggs

Ingredients:
  • 4 large free-range eggs
  • 1 red chilli
  • 1 ripe avocado
  • ½ a lime
  • 1-2 sprigs of fresh coriander
Instructions:
  • Preheat the oven to highest setting. Grease a small skillet or round baking dish with olive oil, then add eggs. Thinly slice red chili, deseed if preferred, and sprinkle over eggs. Peel and pit avocado, slice, and arrange around eggs. Squeeze half a lime over avocado, season with salt and pepper. Bake for 7 to 10 minutes until whites are set and yolks are runny. Chop coriander leaves and sprinkle over eggs. Serve with lime wedges and buttered toast. Enjoy!
