Italian meets Mexican in this delightful fusion dish, blending the best of both worlds with a pizza-tostada twist.
Ingredients:
  • 4 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • Cooking spray
  • 1 cup from 1 can (16 oz) Old El Paso™ Traditional Refried Beans
  • 8 medium green onions, sliced (1/2 cup)
  • 1 medium tomato, seeded, diced
  • 1 cup shredded hot pepper Monterey Jack cheese (4 oz)
Instructions:
  • Preheat oven to 400°F with the rack in the lowest position. Spray one side of each tortilla with cooking spray. Place the tortillas, sprayed side down, on two large ungreased cookie sheets. Spread 1/4 cup of refried beans on each tortilla, then top with onions, tomatoes, and cheese.
  • Bake one cookie sheet at a time on the lowest oven rack for 10 to 12 minutes, or until the bottoms are golden brown, and the cheese is melted and bubbly. Serve by cutting into wedges.
