Whip up a delicious Mexican breakfast wrap with scrambled eggs, cheese, and tomato in just 20 minutes! Perfect for a quick and satisfying breakfast or brunch option.
Ingredients:
  • 1 large green bell pepper, chopped (1 cup)
  • 1 large onion, chopped (1 cup)
  • 1 3/4 cups fat-free egg product (from two 8-oz cartons)
  • 1/3 cup fat-free (skim) milk
  • 1/8 teaspoon pepper
  • 4 fat-free flour tortillas (8 to10 inch)
  • 1/2 cup shredded fat-free Cheddar cheese (2 oz)
  • 1/4 cup chopped tomato
  • 1/4 cup chopped fresh cilantro
Instructions:
  • In a sizzling skillet sprayed with cooking spray, sauté bell pepper and onions over medium heat, covered, for 4-6 minutes until softened, stirring occasionally.
  • In a medium bowl, vigorously combine egg product, milk, and pepper until smooth. Grease vegetables and skillet with cooking spray before pouring the egg mixture over the vegetables. Cook gently, stirring occasionally, until the eggs are fully set.
  • Heat the tortillas according to the package instructions.
  • Place warm tortillas on plates, fill each with scrambled egg mixture, cheese, tomato, and cilantro. Roll them up before serving.
